Another Long Meatless Day

I am weakening; I can feel it. I want to eat a chicken sandwich but I resisted the temptation while out in town today.

I truly believe that I would have eaten meat today if it were not that I see this as a challenge for me; a chance to show a little personal discipline.

I know that I have a pretty healthy diet, chocolate notwithstanding, but the craving for something more “substantial” than baked yams and salad is very strong.

vegetables-veggies-dietWriting about this transition to a vegetarian diet is probably helping me remain steadfast in this. I might falter eventually, but I would still not consider that to be failure. There will be little ups and downs along the way, but the ultimate goal remains to live a healthier lifestyle, lose a little weight, lower my cholesterol and build up bone density. (I have osteopenia, which is thinning of the bones, and eventually leads to osteoporosis.)

So, another day down. Supper tonight is in the oven and it is a baked potato. Umm, yum.
